Orso's Mushroom Ragu is the packed full of savory earthy flavor from a rich blend of foraged mushrooms. Oyster, maitake, porcini, and cremini mushrooms all collide into a long simmered ragu and reduce alongside wine and stock until it reaches the perfect thickness.

Our Gluten Free Cassarecce is the pairing of choice here for most people, but Tagliatelle and Bucatini are close seconds. Or you could keep it earth themed and pair it with delicate pasta flowers (Campanelle). Chef's favorite pairings for this one are Cavatelli and Lumache... so that just about covers all of them.
