Orso's Tagliatelle are silky ribbons of fresh pasta made using a traditional Northern Italian egg dough. Each nest is made by hand with love (and a giant rolling pin), giving the pasta a perfectly textured surface that is built for clinging to sauce.
In Bologna, the original home of tagliatelle, there is no other pairing for this pasta than the iconic Ragu Bolognese. Here in Los Angeles, we take more liberties. Apricot Chicken Ragu, Mushroom Ragu are both excellent sauce choices... and no one can argue with Cacio e Pepe or the Saffron Turmeric Butter Sauce either.
